Baked Meatballs

Lean beef and nonfat cooking spray makes these meatballs heart-healthy. Use them in spaghetti or meatball sandwiches.

Ingredients:

  • 1/4 cup onions, minced
  • 2 lbs lean ground beef
  • 2 eggs
  • 3/4 cup breadcrumbs
  • 1/2 cup whole milk
  • 1/8 tsp salt
  • 1/2 tsp pepper
  • 2 tsp onion powder
  • 1/2 tsp garlic powder

Directions:

  1. Preheat oven to 400 degrees F. Spray baking sheet lightly with nonfat cooking spray.
  2. Spray small skillet with nonfat cooking spray. Add onions and cook over medium heat until tender, about 3 minutes.
  3. Mix remaining ingredients together in bowl; add onions. Mix until blended.
  4. Shape beef mixture into 1- to 2-inch meatballs. Place on baking sheet.
  5. Bake 10-12 minutes, until thoroughly cooked.
Yield: 8 servings--Serving size: 3 meatballs
