Healthy Joes
(4 servings)

Ingredients:

  • 3/4 lb. ground beef, lean
  • 1 C. onion, chopped
  • 1 medium bell pepper, chopped
  • 1 1/2 C. spaghetti sauce, low-fat, meatless
  • 1 medium zucchini, shredded
  • 1 T. chili powder
  • 1 t. paprika
  • 1/2 t. garlic, minced, bottled
  • 1/8 t. salt
  • 4 hamburger buns, whole wheat, split
  • *Optional: alfalfa sprouts

Directions:

  1. In large skillet, cook beef, onion and bell pepper over medium high heat until meat is brown and onion is tender, about 7 minutes; stir occasionally.
  2. Place meat mixture in colander, rinse under hot water and drain well. Wipe skillet with paper towel; return meat mixture to skillet.
  3. Stir in spaghetti sauce, zucchini, chili powder, paprika, garlic and salt; bring to a boil over high heat.
  4. Reduce heat and simmer uncovered, 5 minutes.
  5. Spoon meat mixture onto buns.
  6. Top with alfalfa sprouts if desired.
