Many-Ways Meatloaf

You can make this meatloaf with all beef, all turkey, beef and turkey (what we've listed here), or beef and pork. Be sure to use the leanest ground meat you can find!

Ingredients:

  • 1/2 lb lean ground beef
  • 1/2 lb lean ground turkey
  • 2 slices white bread
  • 1/2 cup chopped onion
  • 1 medium carrot, finely grated
  • 2 large eggs (or 1 extra-large egg)
  • 1/4 cup catsup
  • 1 Tbsp mustard
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Directions:

  1. Preheat oven to 375°F. Spray medium-sized loaf pan with cooking spray.
  2. With a fork, mash together the ground meats until well mixed.
  3. Crumble the bread into very small pieces, and mix it into the meat with a fork or mixing spoon.
  4. Add the remaining ingredients and mix together until well blended.
  5. Place mixture in the loaf pan and smooth the top. Bake for approximately 45 minutes, until top is lightly browned.
  6. Allow to stand for 10 minutes before slicing.
Yield: 4 servings, one slice each
