Mushroom Dijon Beef
Here's a zesty dinner entrée. To make slicing easier, freeze the beef for an hour before you start preparation.
Ingredients:
- 3/4 lb boneless beef sirloin steak, 3/4" thick
- 2 cups sliced mushrooms
- 1 medium onion, sliced
- 1 can Campbell's Healthy Request® Cream of Mushroom Soup
- 1/4 cup water
- 2 Tbsp Dijon-style mustard
- 4 cups hot cooked rice (cooked without added salt)
Directions:
- Slice beef into very thin strips.
- Spray skillet with vegetable cooking spray and heat for 1 minute.
- Add mushrooms and onion and cook until tender. Remove vegetables from pan.
- Remove pan from heat and spray it again with cooking spray. Add beef and cook until browned and juices evaporate. Stir often.
- Add soup, water, mustard and vegetables and heat through. Serve over rice.
Yield: 4 servings
