Baked Meatballs
Lean beef and nonfat cooking spray makes these meatballs heart-healthy. Use them in spaghetti or meatball sandwiches.
Ingredients:
- 1/4 cup onions, minced
- 2 lbs lean ground beef
- 2 eggs
- 3/4 cup breadcrumbs
- 1/2 cup whole milk
- 1/8 tsp salt
- 1/2 tsp pepper
- 2 tsp onion powder
- 1/2 tsp garlic powder
Directions:
- Preheat oven to 400 degrees F. Spray baking sheet lightly with nonfat cooking spray.
- Spray small skillet with nonfat cooking spray. Add onions and cook over medium heat until tender, about 3 minutes.
- Mix remaining ingredients together in bowl; add onions. Mix until blended.
- Shape beef mixture into 1- to 2-inch meatballs. Place on baking sheet.
- Bake 10-12 minutes, until thoroughly cooked.
Yield: 8 servings--Serving size: 3 meatballs
