Healthy Joes
(4 servings)
Ingredients:
- 3/4 lb. ground beef, lean
- 1 C. onion, chopped
- 1 medium bell pepper, chopped
- 1 1/2 C. spaghetti sauce, low-fat, meatless
- 1 medium zucchini, shredded
- 1 T. chili powder
- 1 t. paprika
- 1/2 t. garlic, minced, bottled
- 1/8 t. salt
- 4 hamburger buns, whole wheat, split
- *Optional: alfalfa sprouts
Directions:
- In large skillet, cook beef, onion and bell pepper over medium high
heat until meat is brown and onion is tender, about 7 minutes; stir occasionally.
- Place meat mixture in colander, rinse under hot water and drain well. Wipe skillet with paper towel; return meat mixture to skillet.
- Stir in spaghetti sauce, zucchini, chili powder, paprika, garlic and salt; bring to a boil over high heat.
- Reduce heat and simmer uncovered, 5 minutes.
- Spoon meat mixture onto buns.
- Top with alfalfa sprouts if desired.
