Strawberry Bread Pudding Muffins

Here's a wonderful warm dessert or brunch entrée.

Ingredients:

  • 3 cups white bread pieces, lightly packed
  • 2/3 cup skim milk
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 to 1/2 tsp cinnamon
  • 1/3 cup sugar
  • 1 cup strawberry pie filling
  • 2 egg whites, beaten until stiff

Directions:

  1. Preheat oven to 350°.
  2. Spray muffin tins with cooking spray.
  3. Remove crusts from bread and break into pieces.
  4. In a large saucepan, combine milk, extracts, cinnamon and sugar.
  5. Heat until very warm and sugar has dissolved.
  6. Add bread pieces and let stand for 15 - 20 minutes.
  7. Beat egg whites and fold into bread mixture.
  8. Carefully blend in strawberry filling.
  9. Spoon mixture into muffin tins until completely full.
  10. Bake for approximately 45 minutes.
  11. Remove from oven and let stand for a few minutes before removing from tins.
  12. Serve warm or at room temperature with sweetened cream; garnish with a fresh strawberry half.
Yield: 8 muffins.
