Mushroom Dijon Beef

Here's a zesty dinner entrée. To make slicing easier, freeze the beef for an hour before you start preparation.

Ingredients:

  • 3/4 lb boneless beef sirloin steak, 3/4" thick
  • 2 cups sliced mushrooms
  • 1 medium onion, sliced
  • 1 can Campbell's Healthy Request® Cream of Mushroom Soup
  • 1/4 cup water
  • 2 Tbsp Dijon-style mustard
  • 4 cups hot cooked rice (cooked without added salt)

Directions:

  1. Slice beef into very thin strips.
  2. Spray skillet with vegetable cooking spray and heat for 1 minute.
  3. Add mushrooms and onion and cook until tender. Remove vegetables from pan.
  4. Remove pan from heat and spray it again with cooking spray. Add beef and cook until browned and juices evaporate. Stir often.
  5. Add soup, water, mustard and vegetables and heat through. Serve over rice.
