Dress Up that Chicken!

There are so many ways to keep a chicken dinner from becoming a boring routine. Here are a few ideas to add variety to your menus when grilling or broiling chicken breasts:

  • Marinate the chicken in lime juice and cumin before cooking. Serve with salsa.
  • Top cooked chicken with sliced or whole sautéed mushrooms and thyme.
  • Add caramelized onion rings (cooked until golden).
  • Serve it with a homemade fresh fruit relish, such as raspberries heated in a little balsamic vinegar, or grilled fresh fruit slices.
  • Reduce dry white wine by half and add garlic, lemon juice, and pepper. Pour over the cooked chicken.
  • Make a paste of coarse mustard, garlic and onion. Spread it over the chicken when you turn it to cook the second side.
  • Make a quick tomato sauce with chopped fresh tomato, minced garlic, and minced fresh basil.
  • Top it with a sauce made from minced fresh ginger, minced garlic, some dry sherry, and a little reduced-sodium soy sauce.
