Tips for Buying and Handling Chicken

As we add more poultry to our heart-healthy diets, there are a few precautions you can take to keep the meat fresh. Poultry from even the best market needs special handling.

  • First of all, check the expiration date on the package and buy only the freshest. Make it one of the last items to go into your shopping cart and take it home immediately.

  • At home, remove it from its packaging, rinse it thoroughly with cold water, and pat it dry with paper towels. Remove and discard any lumps of fat.

  • If you aren't cooking it immediately, wrap it loosely in aluminum foil and store it in the coldest part of the refrigerator. Never let poultry sit at room temperature for more than 15 minutes. Use it within 48 hours.

  • If you will be freezing it, wrap it airtight in freezer wrap or heavy plastic wrap. Mark the date and weight of the poultry on the package. Freeze it solidly, and use it within three months. Always thaw frozen poultry in the refrigerator, not on the counter. Do not refreeze uncooked poultry.
